Oh my gosh! We had the best chicken for dinner tonight . I found this recipe on Pinterest last year and totally forgot about it. It's called Man Pleasing Chicken and was originally posted by the blog http://www.wittyinthecity.com/ . I'm not crazy about the name...I think I re-named it People Pleasing Chicken. I like that much better. The best part about this recipe is that it's super easy and has only a few ingredients. If you make this, please use REAL maple syrup! Nothing else will do.
People Pleasing Chicken
1 1/2 lbs. boneless, skinless chicken thighs (approximately 6 thighs)
1/2 c. Dijon mustard
1/4 c. maple syrup
1 T. rice wine vinegar
salt & pepper, to taste
fresh rosemary, to taste

- Preheat your oven to 450ºF.
- Mix together Dijon mustard, maple syrup, and rice wine vinegar.
- Put chicken thighs into a foil-lined, oven-proof baking dish. Salt and pepper the thighs. Pour the maple mustard mixture over the chicken, turning the thighs in the mixture so they are fully coated.
- Bake for 40 minutes or until a meat thermometer reads 165ºF. Baste the tops of the chicken with more sauce halfway through.
- Let the chicken rest for 5 minutes before serving. Spoon extra sauce & sprinkle fresh rosemary over the top.
